Grilled Corn Guacamole (recipe adapted from here)
Holy GUACAMOLE! This recipe is amazing! I made it for my boyfriend’s friend “going away” party, and I am highly considering making this for my 21st birthday party. I only changed a few things. This recipe serves 10 people.
3 ears Corn, Shucked
6 whole ripe Avocados, Diced
1 whole Large Tomato, Diced
1/3 cup Green Onion, Finely Diced
2 cloves Garlic, Finely Minced
2 Tablespoons Diced Fresh Jalapeno
1 whole Lime, Juiced
The Zest from the Lime
1/2 teaspoon Ground Sea Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro Leaves
Coat the corn with a bit of butter before grilling. Grill corn until nice and golden, with good grill marks on the kernels. Allow to cool a bit, then cut the kernels off the cobs. Set aside.
Halve avocados and remove pit. Cut avocado into a dice inside the skin, then scoop out with a spoon.
In a bowl, combine diced avocados, jalapenos, minced garlic, diced onion, lime juice, salt, cilantro, the zest from the lime you juiced, and cumin. Mash/combine to your liking. Add the grilled corn and tomatoes last. Gently combine them.
Serve immediately or chill for about an hour!
Tips to a perfect guacamole:
Use fresh ingredients, especially fresh tomatoes. Try buying tomatoes that are still on the vine. You can definitely tell they’re much more fresh by the aroma they give off.
Using the zest from the lime you will juice will give the guacamole a little something extra and enhance the flavors once combined.Posted on April 25, 2013 at 3:14 AM
